Water collects nothing. There is no account, no sign-in, and no server. The app makes no network connections at all. Your data leaves your device only if you send it somewhere yourself, with Export (below), or turn on Apple Health.
Everything Water records is written to your device and stays there:
The app shares this data with its own Home Screen and Lock Screen widgets through an Apple App Group. That is a shared folder between the app and its widget on the same device. It is not a network service and no other app can read it.
Settings → Export history creates a spreadsheet file (CSV) of everything you have logged and opens the iOS share sheet. Where it goes from there — Files, Mail, AirDrop or anywhere else — is your choice; Water sends it nowhere on its own.
Settings has a Save to Apple Health switch, off unless you turn it on. When it is on, Water writes each cup you log to Water in the Health app, on your device, and removes it again if you undo the cup. Water only writes; it never reads anything from Health. You can turn it off in Water's Settings, or remove Water's access in the Health app, at any time.
Once a cup is in Health, Health manages it: other apps you allow to read Water data can see it, and it stays in Health even if you delete Water. You can remove it in the Health app.
The app's privacy manifest, which Apple publishes on the App Store listing, declares no collected data types and no tracking.
One honest caveat. If you back up your iPhone — to iCloud or to a computer — that backup is made by Apple's software and may include Water's stored data, in the same way it includes data from your other apps. Those backups are controlled by you and by Apple under Apple's privacy policy. The developer of Water has no access to them and receives nothing from them.
Deleting the app removes its database and settings from your device. There is no account to close and nothing to request from anyone. Two things are kept apart from the app, and stay until you remove them: cups you saved to Apple Health (remove them in the Health app), and any file you exported (delete it wherever you saved it).
Water is rated 4+ and is suitable for all ages. Since it collects no data from anyone, it collects none from children.
If a future version of Water ever collects or transmits anything, this policy will be updated before that version is released, and the change will be described plainly here rather than buried. The date at the top will tell you when it last changed.
